Ham and Bean Soup

Ingredients
  

  • 1 pound dried navy beans rinsed and picked over
  • 3 cups diced cooked ham
  • 1 large yellow onion diced
  • 3 medium carrots peeled and diced
  • 3 celery stalks diced
  • 4 cloves garlic minced
  • 8 cups chicken broth
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika

Method
 

  1. Add the rinsed navy beans to the bottom of your slow cooker.
  2. Layer in the diced ham, onion, carrots, celery, and minced garlic on top of the beans.
  3. Pour the chicken broth over everything, then add the bay leaves, thyme, black pepper, and smoked paprika.
  4. Cover and cook on low for 8 hours or on high for 4-5 hours, until the beans are tender and the soup has thickened.
  5. Remove the bay leaves, taste and adjust seasoning with salt if needed, then serve hot with crusty bread or cornbread.
