Method
- Brown the ground beef in a skillet over medium-high heat, then drain the fat.
- Add the chili powder, cumin and garlic powder and stir for 30 seconds to coat the meat.
- Stir in the black beans and salsa and simmer 8 to 10 minutes.
- Sprinkle the cheddar over the top, cover and let it melt.
- Top with crushed tortilla chips just before serving.
Notes
Draining the fat keeps the dish from going greasy and helps the spices coat properly. Chili powder, cumin and garlic powder are the classic Tex-Mex trio, with the cumin giving the smoky backbone. Add the chips right before serving or they steam and go soggy. Swap in ground turkey or chicken and pepper jack for heat, or add corn or diced tomatoes to bulk it up.
