Ground Beef Stuffed Peppers

Ingredients
  

  • 1 pound 80/20 ground beef
  • 6 red or yellow bell peppers halved and seeded
  • 2 cups cooked rice
  • 1 14.5-ounce can fire-roasted diced tomatoes
  • 1/2 cup beef broth
  • 1 teaspoon smoked paprika
  • 1 teaspoon Italian seasoning
  • 1 1/2 cups mozzarella or cheddar cheese shredded
  • Salt and pepper to taste

Method
 

  1. Brown the ground beef in a large skillet and drain the fat.
  2. Stir in the fire-roasted tomatoes, beef broth, smoked paprika and Italian seasoning and simmer 5 minutes.
  3. Add the cooked rice and stir until combined, then season to taste.
  4. Spoon the filling into the halved peppers and arrange them in the skillet.
  5. Cover and cook 15 to 20 minutes until the peppers are tender, then top with cheese and let it melt.

Notes

Red and yellow peppers are sweeter and more forgiving for stuffing than green. Fire-roasted tomatoes add smoky depth over plain diced. Drain the fat or the filling gets greasy and the peppers go soggy. Use pre-cooked rice - dry rice will not cook through in the pepper. 80/20 beef keeps it from tasting dry.
