Ground Beef Stroganoff

Ingredients
  

  • 1 pound 80/20 ground beef
  • 8 ounces mushrooms sliced
  • 1 medium onion diced
  • 3 cups beef broth
  • 3 cups egg noodles
  • 1 tablespoon Worcestershire sauce
  • 1 cup sour cream
  • 2 tablespoons flour
  • Salt and pepper to taste

Method
 

  1. Brown the ground beef in a large skillet and drain the fat.
  2. Add the mushrooms in an uncrowded layer and cook until browned, then add the onion and cook until softened.
  3. Sprinkle in the flour and stir, then add the beef broth and Worcestershire sauce.
  4. Bring to a simmer, add the egg noodles and cook 8 to 10 minutes until tender, watching the liquid level.
  5. Remove from the heat and stir in the sour cream until creamy. Season and serve.

Notes

Add the sour cream off the heat or at very low temperature - boiling it causes curdling and separation. Do not crowd the mushrooms or they steam instead of saute. The noodles cook in the broth and absorb flavor, but the liquid ratio can go starchy or dry fast, so keep an eye on it.
