- Brown the ground beef in a skillet over medium-high heat and drain the grease.
- Add the onion and cook until softened.
- Stir in the enchilada sauce, black beans and corn and bring to a low simmer.
- Scatter the cheese over the top, cover and cook on low until melted.
- Top with tortilla chips right before serving.
Notes
Drain the grease or the dish turns oily and watery. Enchilada sauce is the flavor backbone and store-bought quality varies widely. Simmer low and covered so the cheese melts without burning - medium-high risks rubbery or scorched cheese. Add the chips at the very end. Pinto beans or frozen corn swap in fine. Add jalapenos, chipotle or hot sauce for heat, sour cream or avocado to cool it down.
