- In a large pot, cook the ground beef over medium heat until browned. Drain any excess fat.
- Add the diced onion and minced garlic to the pot. Cook for about 5 minutes, until the onion is softened and fragrant.
- Stir in the uncooked rice, beef broth, diced tomatoes (with their juice), oregano, basil, salt, and pepper. Mix well to combine.
- Bring the mixture to a boil, then reduce the heat to low. Cover and let simmer for 20-25 minutes, or until the rice is tender.
- Stir in the chopped spinach and cook for another 2-3 minutes, until the spinach is wilted.
- Taste and adjust seasoning if needed.
