Grilled Chicken with Pineapple Salsa

Ingredients
  

  • 4 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup fresh pineapple diced
  • 1/2 red bell pepper diced
  • 1/4 red onion finely chopped
  • 1/4 cup fresh cilantro chopped
  • Juice of 1 lime
  • Salt to taste

Method
 

  1. Preheat your grill to medium-high heat.
  2. In a small bowl, mix olive oil, garlic powder, paprika, salt, and pepper to create a marinade.
  3. Rub the marinade all over the chicken breasts, making sure they are well coated.
  4. Place the chicken breasts on the grill and cook for about 6-7 minutes on each side, or until the chicken is cooked through and has nice grill marks. Remove from the grill and let rest for a few minutes.
  5. While the chicken is grilling, prepare the pineapple salsa. In a medium bowl, combine the diced pineapple, red bell pepper, red onion, cilantro, and lime juice.
  6. Season with salt to taste and mix well.
  7. Serve the grilled chicken breasts topped with the fresh pineapple salsa.

Notes

Make sure the chicken is fully cooked by checking that the internal temperature reaches 165°F (75°C). For added flavor, let the chicken marinate for at least 30 minutes before grilling. This pineapple salsa is also great on fish or as a dip with tortilla chips!
