Grilled Chicken Caesar Salad

Ingredients
  

  • 4 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 8 cups chopped romaine lettuce
  • 1/2 cup grated Parmesan cheese
  • 1 cup Caesar dressing
  • 1 cup croutons
  • Lemon wedges for garnish

Method
 

  1. Preheat your grill to medium-high heat.
  2. In a small bowl, mix olive oil, garlic powder, dried oregano, salt, and pepper.
  3. Rub the mixture all over the chicken breasts to coat them evenly.
  4. Grill the chicken breasts for about 6-7 minutes on each side, or until fully cooked and nice grill marks appear. The internal temperature should reach 165°F (75°C).
  5. Remove from the grill and let rest for a few minutes.
  6. Slice the grilled chicken breasts into thin strips.
  7. In a large bowl, combine the chopped romaine lettuce, grated Parmesan cheese, and croutons.
  8. Add Caesar dressing and toss to coat the salad evenly.
  9. Top the salad with the sliced grilled chicken.
  10. Garnish with lemon wedges on the side.
  11. Serve immediately and enjoy your delicious Grilled Chicken Caesar Salad!

Notes

You can use homemade or store-bought Caesar dressing based on your preference. For a lighter option, you can use a low-fat or yogurt-based Caesar dressing. This salad is perfect for a quick and healthy weeknight dinner or a lunch meal prep!
