Grilled Chicken and Veggie Skewers

Ingredients
  

  • 4 boneless skinless chicken breasts, cut into 1-inch cubes
  • 1 red bell pepper cut into 1-inch pieces
  • 1 yellow bell pepper cut into 1-inch pieces
  • 1 zucchini sliced into rounds
  • 1 red onion cut into wedges
  • 1 cup cherry tomatoes
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 2 tablespoons lemon juice
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Skewers

Method
 

  1. Soak wooden skewers in water for about 15-20 minutes to prevent burning on the grill.
  2. In a large bowl, combine olive oil, soy sauce, lemon juice, minced garlic, dried oregano, salt, and pepper.
  3. Add the chicken cubes to the marinade and toss to coat. Let it marinate for at least 15 minutes.
  4. Preheat your grill to medium-high heat.
  5. Thread the marinated chicken, red bell pepper, yellow bell pepper, zucchini, red onion, and cherry tomatoes alternately onto the skewers.
  6. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and the veggies are slightly charred.
  7. Remove from the grill and let rest for a few minutes.
  8. Serve immediately and enjoy your colorful and healthy Grilled Chicken and Veggie Skewers!

Notes

You can customize this recipe by adding your favorite veggies or using different herbs in the marinade. These skewers are perfect for meal prep—just store them in an airtight container in the fridge and reheat when ready to eat. If you don't have a grill, you can also cook these skewers in the oven at 400°F (200°C) for about 20-25 minutes.
