Grilled Cheese and Soup Family Dinner

Sometimes the simplest meals are the best, and this grilled cheese and tomato soup combo proves it! This is my go-to when I need something quick, warm, and satisfying that the kids will actually eat without complaining. The trick is making the grilled cheese extra crispy on the outside while keeping it gooey on the inside—pure comfort food magic that costs less than ordering takeout!

Ingredients
  

  • 8 slices white or wheat bread
  • 8 slices American or cheddar cheese
  • 4 tablespoons butter softened
  • 2 cans 14.5 oz each diced tomatoes
  • cups chicken or vegetable broth
  • ½ cup heavy cream or half-and-half
  • 2 tablespoons tomato paste
  • 1 teaspoon sugar
  • 1 teaspoon dried basil
  • Salt and pepper to taste

Method
 

  1. Start the soup: In a large pot, combine diced tomatoes, broth, tomato paste, sugar, and basil. Bring to a simmer over medium heat and cook for 10 minutes.
  2. Use an immersion blender to puree the soup until smooth (or carefully transfer to a blender in batches). Stir in cream and season with salt and pepper. Keep warm on low heat.
  3. Butter one side of each bread slice. Place 4 slices butter-side down and top each with 2 cheese slices, then place remaining bread slices on top, butter-side up.
  4. Heat a large skillet or griddle over medium heat. Cook sandwiches for 3-4 minutes per side until golden brown and cheese is melted.
  5. Cut sandwiches in half diagonally and serve immediately with hot tomato soup for dipping. Heaven in a bowl!
