Greek Beef Skillet

Ingredients
  

  • 1 pound ground beef
  • 1 red onion diced
  • 2 cups cherry tomatoes halved
  • 1 medium zucchini diced
  • 2 teaspoons dried oregano
  • 1/2 cup feta cheese crumbled
  • 1/3 cup black olives sliced
  • Salt and pepper to taste

Method
 

  1. Brown the ground beef in a skillet over medium-high heat and drain the fat.
  2. Add the red onion and oregano and cook until the onion softens.
  3. Add the zucchini and cherry tomatoes in the last 5 minutes of cooking, just until they soften.
  4. Season with salt and pepper.
  5. Remove from the heat and scatter the feta and black olives over the top before serving.

Notes

Lamb is the more traditional Greek choice and adds richer flavor, but ground beef is more accessible. Add the feta and olives at the end to preserve their texture and saltiness. Fresh oregano adds brightness over dried. Zucchini and cherry tomatoes cook fast - overcooking makes the dish watery, so add them in the last five minutes.
