Grandma's Peanut Butter Cookies

Ingredients
  

  • 1 cup creamy peanut butter
  • 1 cup granulated sugar plus extra for sprinkling
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Method
 

  1. Preheat oven to 350°F and line two baking sheets with parchment paper.
  2. Mix together peanut butter, sugar, egg, vanilla extract, baking soda, and salt in a large bowl until smooth and well combined.
  3. Roll dough into 1-inch balls and place them 2 inches apart on the prepared baking sheets.
  4. Use a fork to press a crisscross pattern into each cookie, flattening them to about 1/4-inch thickness, then sprinkle lightly with additional sugar.
  5. Bake for 8-10 minutes until edges are just golden but centers still look slightly soft.
  6. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
