Preheat oven to 350°F. Bring a large pot of salted water to a boil.
Blanch green beans in boiling water for 5 minutes until bright green and crisp-tender. Drain and set aside.
In a large skillet, melt butter over medium heat. Add mushrooms and onion, cooking until softened, about 6-7 minutes.
Add garlic and cook for 1 minute until fragrant. Sprinkle flour over the vegetables and stir to coat.
Gradually whisk in chicken broth and cream. Cook, stirring constantly, until the sauce thickens, about 3-4 minutes.
Season with salt, pepper, and nutmeg. Remove from heat and stir in green beans and 3/4 cup of the fried onions.
Transfer mixture to a greased 9x13-inch baking dish. Bake for 20 minutes.
Top with remaining fried onions and bake for 5 more minutes until onions are golden and crispy. Serve hot.
