Graham Cracker S'mores Cheesecake Bars

Cheesecake bars sound fancy but they're genuinely one of the easiest things you can make in a 9x13. The filling comes together in a bowl with a hand mixer and the whole thing bakes in under 40 minutes. The s'mores topping is what makes people stop mid-bite and say wait, what is this.

Ingredients
  

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter melted
  • 3 tablespoons granulated sugar
  • 16 oz cream cheese softened
  • 2/3 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup milk chocolate chips melted and slightly cooled
  • 1 1/2 cups mini marshmallows

Method
 

  1. Preheat oven to 325°F and line a 9x13 inch pan with parchment paper.
  2. Combine graham cracker crumbs, melted butter, and 3 tablespoons sugar, press into pan, and bake for 8 minutes.
  3. Beat cream cheese and remaining sugar until smooth, then add eggs and vanilla and mix until combined.
  4. Pour cheesecake filling over the warm crust and bake for 25 minutes until just set.
  5. Remove from oven, drizzle melted chocolate over the top, and scatter marshmallows evenly.
  6. Broil for 1 to 2 minutes until marshmallows are golden, then cool completely and refrigerate for 2 hours before cutting.
