Gingerbread Cookies

Gingerbread cookies that are soft in the middle and deliciously spiced make the perfect base for icing and mini candy buttons.

Ingredients
  

  • 3 cups all-purpose flour
  • 1 tbsp ground ginger
  • 1 tsp ground cinnamon
  • 0.5 tsp ground cloves
  • 0.75 cup butter softened
  • 0.75 cup brown sugar packed
  • 1 egg
  • 0.5 cup molasses

Method
 

  1. Whisk the flour, ginger, cinnamon, and cloves together in a bowl.
  2. Beat the butter and brown sugar until fluffy, then mix in the egg and molasses.
  3. Stir the dry mix into the wet until a soft dough forms, then chill it for 1 hour.
  4. Roll out to 1/4 inch, cut into shapes, and arrange on lined baking sheets.
  5. Bake at 350F for 8 to 10 minutes, until the edges are just set.
  6. Cool completely before decorating with royal icing.

Notes

Chilling the dough keeps your cut-out shapes crisp and prevents spreading.
