Gingerbread Biscotti

Perfect for gifts, these twice-baked, highly-spiced biscotti will stay crisp for weeks!

Servings: 24 biscotti

Ingredients
  

  • 2 cups flour
  • 1 tsp ground ginger
  • 1 tsp cinnamon
  • 3 tbsp molasses
  • 3/4 cup sugar
  • 3 large eggs
  • 1 tsp baking powder

Method
 

  1. Whisk together the flour, ginger, cinnamon, and baking powder.
  2. Beat the eggs, sugar, and molasses, then stir in the dry ingredients to form a dough.
  3. Shape into two logs on a lined baking sheet and bake at 350F for 25 minutes.
  4. Cool slightly, then slice each log on the diagonal.
  5. Lay the slices cut-side down and bake another 15 minutes until crisp.
  6. Cool completely before packing.

Notes

Stack them in a cellophane bag tied with twine for an easy gift.
