Garlic Herb Chicken and Veggie Foil Packs

Ingredients
  

  • 1 1/2 pounds boneless skinless chicken breasts cubed
  • 1 pound baby potatoes quartered small
  • 2 cups green beans trimmed
  • 1 bell pepper sliced
  • 4 cloves garlic minced
  • 3 tablespoons olive oil
  • 1 tablespoon Italian herbs
  • Salt and pepper to taste
  • Heavy-duty foil

Method
 

  1. Preheat the oven to 400 degrees F.
  2. Toss the chicken and vegetables with the olive oil, garlic, herbs, salt and pepper.
  3. Divide among four sheets of foil and fold into tightly sealed packets.
  4. Bake 25 to 30 minutes, until the chicken reaches 165 degrees F and the potatoes are tender.
  5. Open the packets carefully - the steam is hot - and serve.

Notes

The foil packet creates a steaming and roasting hybrid that locks in moisture and keeps the chicken juicy. Cut the potatoes small or they will not finish in time. A tight seal is essential - loose packs leak moisture and the vegetables come out dry. Great for meal prep or camping since cleanup is minimal.
