Garlic-Heavy Slow Simmer Chili

Ingredients
  

  • 2 pounds ground beef
  • 1 whole head garlic cloves separated and minced (divided)
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 2 teaspoons smoked paprika
  • 1 teaspoon oregano
  • 2 cans 15 oz each kidney beans, drained and rinsed
  • 1 can 28 oz crushed tomatoes
  • 1 can 6 oz tomato paste
  • 2 cups beef broth
  • 1 large onion diced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

  1. Heat olive oil in a large pot over medium heat. Add diced onion and half of the minced garlic, cooking until softened, about 5 minutes.
  2. Add ground beef and brown thoroughly, breaking it apart with a wooden spoon, about 8-10 minutes. Drain excess fat.
  3. Stir in chili powder, cumin, smoked paprika, oregano, salt, and pepper. Cook for 2 minutes until fragrant.
  4. Add crushed tomatoes, tomato paste, beef broth, and kidney beans. Stir to combine thoroughly.
  5. Bring to a boil, then reduce heat to low. Cover and simmer for 2 hours, stirring occasionally.
  6. Add remaining minced garlic and continue simmering uncovered for 1 more hour, stirring every 15 minutes.
  7. Taste and adjust seasonings as needed before serving hot with your favorite toppings.
