Garlic Ginger Chicken Thighs

Ingredients
  

  • 6 bone-in skin-on chicken thighs
  • 4 cloves garlic minced
  • 2 tablespoons fresh ginger grated
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 2 tablespoons olive oil
  • 2 tablespoons rice vinegar
  • 1 teaspoon sesame oil
  • 1/2 teaspoon black pepper
  • Fresh green onions for garnish optional
  • Sesame seeds for garnish optional

Method
 

  1. Instructions: 1 In a small bowl, whisk together the minced garlic, grated ginger, soy sauce, honey, olive oil, rice vinegar, sesame oil, and black pepper.
  2. Place the chicken thighs in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, making sure each piece is well-coated.
  3. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 4 hours for more flavor.
  4. Preheat your oven to 400°F (200°C). Line a baking sheet with aluminum foil or parchment paper.
  5. Arrange the marinated chicken thighs on the prepared baking sheet, skin-side up. Discard any remaining marinade.
  6. Bake in the preheated oven for 35-40 minutes, or until the chicken is cooked through and the skin is crispy and golden brown.
  7. If you prefer extra crispy skin, you can broil the chicken for an additional 2-3 minutes, keeping a close eye on it to prevent burning.
  8. Remove from the oven and let the chicken rest for a few minutes before serving.
  9. Garnish with fresh green onions and sesame seeds if desired.
  10. Notes: Leftovers are perfect for meal prep or adding to salads.
  11. Serve with steamed rice and a side of veggies for a complete meal.
  12. This marinade works great with chicken breasts or drumsticks too!
