Instructions: 1 In a small bowl, whisk together the minced garlic, grated ginger, soy sauce, honey, olive oil, rice vinegar, sesame oil, and black pepper.
Place the chicken thighs in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, making sure each piece is well-coated.
Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 4 hours for more flavor.
Preheat your oven to 400°F (200°C). Line a baking sheet with aluminum foil or parchment paper.
Arrange the marinated chicken thighs on the prepared baking sheet, skin-side up. Discard any remaining marinade.
Bake in the preheated oven for 35-40 minutes, or until the chicken is cooked through and the skin is crispy and golden brown.
If you prefer extra crispy skin, you can broil the chicken for an additional 2-3 minutes, keeping a close eye on it to prevent burning.
Remove from the oven and let the chicken rest for a few minutes before serving.
