Fried Green Tomatoes

Slices of firm green tomatoes coated with cornmeal and fried until lovely and crunchy.

Ingredients
  

  • 3 green tomatoes sliced thick
  • 1 cup cornmeal
  • 0.5 cup all-purpose flour
  • 1 egg beaten
  • 0.5 cup buttermilk
  • 1 tsp Cajun seasoning
  • 1 cup vegetable oil for frying

Method
 

  1. Slice the tomatoes into thick rounds and pat them dry.
  2. Whisk the egg with the buttermilk in one bowl, and combine the cornmeal, flour, and Cajun seasoning in another.
  3. Dip each tomato slice in the buttermilk mixture, then dredge in the cornmeal coating.
  4. Heat the oil in a skillet over medium-high and fry the slices for 2 to 3 minutes per side until golden.
  5. Drain on paper towels, season with a pinch of salt, and serve with remoulade.

Notes

Choose firm, very green tomatoes so they hold their shape in the hot oil.
