Fried Calamari

Calamari rings dusted in seasoned flour and fried until crisp and golden.

Ingredients
  

  • 1 lb calamari cut into rings
  • 1 cup flour
  • 1/2 cup cornstarch
  • 1 tsp salt
  • 2 cups vegetable oil for frying
  • 1 lemon cut into wedges

Method
 

  1. Pat the calamari rings completely dry.
  2. Mix the flour, cornstarch, and salt in a bowl.
  3. Heat the oil to 375 degrees F in a deep pan.
  4. Toss the calamari in the flour mixture and shake off the excess.
  5. Fry in batches 2 to 3 minutes, until pale golden and crisp.
  6. Drain on paper towels and serve with lemon and marinara.

Notes

Don't overcrowd the oil or the calamari turns chewy.
