Ingredients
  

  • 6 cups mixed salad greens
  • 3 cups cooked turkey sliced or cubed
  • 1 cup dried cranberries
  • ¾ cup pecans toasted and chopped
  • 1 cup crumbled feta cheese
  • 1 red apple thinly sliced
  • ½ red onion thinly sliced
  • cup extra virgin olive oil
  • 3 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Method
 

  1. In a small bowl or jar, whisk together olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper until well combined. Set aside.
  2. In a large salad bowl, add mixed greens as your base.
  3. Top with turkey, dried cranberries, toasted pecans, crumbled feta, apple slices, and red onion.
  4. Drizzle dressing over the salad just before serving, or serve dressing on the side.
  5. Toss gently to combine, ensuring all ingredients are evenly coated with dressing.
