Freezer Breakfast Burritos

Make a batch of these a few days before New Year's and you have the easiest possible morning. Wrap individually in foil, freeze them, and heat from frozen in the microwave or oven in ten minutes. Even picky kids eat these without argument.

Ingredients
  

  • 8 large flour tortillas 10-inch
  • 1 lb breakfast sausage cooked and crumbled
  • 10 large eggs scrambled and cooked
  • 1 can 15 oz black beans, drained and rinsed
  • 1 cup salsa
  • 2 cups shredded cheddar cheese
  • Salt and pepper to taste
  • Hot sauce optional

Method
 

  1. Cook sausage and scrambled eggs separately. Season eggs with salt and pepper.
  2. Warm tortillas in the microwave or dry skillet so they're pliable.
  3. Lay a tortilla flat. Layer in the center: a few spoonfuls of eggs, sausage, black beans, salsa, and cheese.
  4. Fold in the sides of the tortilla, then roll tightly from the bottom up into a burrito shape.
  5. Wrap each burrito tightly in foil and place in a zip-lock bag. Freeze for up to 1 month.
  6. To reheat from frozen: unwrap foil, wrap in a damp paper towel, and microwave 2 to 3 minutes, flipping halfway.
