Fluffy Buttermilk Pancakes for Dinner

There is truly no easier way to make everyone at the table happy than pancakes for dinner. This batter comes together in five minutes and the pancakes are thick and fluffy in a way that the boxed mix never quite matches. Set up a topping bar with berries, syrup, and whipped cream and watch your kids

Ingredients
  

  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups buttermilk
  • 2 large eggs
  • 3 tablespoons unsalted butter melted
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries
  • maple syrup for serving

Method
 

  1. Whisk together flour, sugar, baking powder, baking soda, and salt in a large bowl.
  2. In a separate bowl, whisk buttermilk, eggs, melted butter, and vanilla together.
  3. Pour the wet ingredients into the dry ingredients and stir just until combined, leaving some lumps in the batter.
  4. Let the batter rest for 5 minutes while you heat a griddle or skillet over medium heat and grease with a little butter.
  5. Pour 1/3 cup of batter per pancake onto the griddle, scatter a few blueberries on top, and cook until bubbles form on the surface before flipping.
  6. Cook another 1 to 2 minutes on the second side until golden, then serve with maple syrup.
