Figgy Pudding

A steamed pudding filled with dried figs and warm spices of the holidays.

Ingredients
  

  • 1.5 cups dried figs chopped
  • 1 cup milk
  • 1.5 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 0.5 cup butter softened
  • 0.75 cup brown sugar packed
  • 2 eggs

Method
 

  1. Simmer the figs in the milk until softened, then cool slightly.
  2. Whisk the flour, baking soda, and cinnamon together.
  3. Cream the butter and brown sugar, then beat in the eggs.
  4. Fold in the dry mix, then stir in the figs and milk.
  5. Spoon into a greased pudding basin, cover, and steam for about 90 minutes.
  6. Turn out and serve warm with a pour of cream.

Notes

A drizzle of warm custard takes this right over the top.
