Ingredients

  • 3 tablespoons vegetable oil divided
  • 3 large eggs beaten
  • 4 cups cooked white rice chilled (day-old works best)
  • 2 cups cooked turkey diced
  • 1 cup frozen mixed vegetables peas, carrots, corn
  • 3 green onions sliced
  • 3 cloves garlic minced
  • 1 tablespoon fresh ginger minced
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil

Method

  1. Heat 1 tablespoon oil in a large wok or skillet over high heat. Add beaten eggs and scramble until just cooked. Remove and set aside.

  3. Toss in frozen vegetables and stir-fry for 2 minutes until heated through.
  4. Add the cold rice, breaking up any clumps with your spatula. Stir-fry for 3-4 minutes until rice is heated through and starting to crisp slightly.

  7. Remove from heat, stir in green onions, and serve immediately.
