Fall Apart Tender Roast

Ingredients
  

  • 3 lb beef chuck roast
  • 2 tablespoons vegetable oil
  • 1 packet dry onion soup mix
  • 2 cups beef broth
  • 1/4 cup balsamic vinegar
  • 3 tablespoons brown sugar
  • 1 tablespoon Dijon mustard
  • 4 cloves garlic minced
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Method
 

  1. Heat vegetable oil in a large skillet over medium-high heat and sear the roast on all sides until deeply browned, about 2-3 minutes per side.
  2. Transfer the seared roast to your slow cooker and sprinkle the onion soup mix over the top.
  3. In a bowl, whisk together beef broth, balsamic vinegar, brown sugar, Dijon mustard, and minced garlic.
  4. Pour the broth mixture over the roast in the slow cooker.
  5. Cover and cook on low for 8 hours until the meat is fall-apart tender.
  6. Remove the roast carefully as it will be very tender, shred with two forks, and serve with the cooking liquid.
