Espresso Mocha Cheesecake

The cheesecake mocha uses real espresso and melted chocolate to create a dessert for real coffee enthusiasts.

Ingredients
  

  • 2 cups chocolate cookie crumbs
  • 5 tbsp butter melted
  • 32 oz cream cheese softened
  • 1 1/4 cups granulated sugar
  • 4 eggs room temperature
  • 2 tbsp espresso powder
  • 6 oz semisweet chocolate melted
  • 1/2 cup sour cream

Method
 

  1. Heat oven to 325F. Press cookie crumbs and butter into a springform pan and bake 10 minutes; cool.
  2. Dissolve espresso powder in a tablespoon of hot water and set aside.
  3. Beat cream cheese and sugar smooth, then blend in melted chocolate and the espresso.
  4. Add eggs one at a time, mix in sour cream, and pour over the crust.
  5. Bake 60 to 70 minutes until just set, cool in the cracked oven 1 hour, then chill 6 hours.

Notes

Dust the top with cocoa and a few chocolate-covered espresso beans for flair.
