Eggnog Bread Pudding

Cubes of bread soaked in a spiced eggnog custard and baked to golden pillowy perfection.

Ingredients
  

  • 8 cups cubed brioche
  • 3 cups eggnog
  • 3 large eggs
  • 0.5 cup sugar
  • 1 tsp nutmeg
  • 1 tsp vanilla extract
  • 0.25 cup raisins

Method
 

  1. Preheat the oven to 350F and butter a baking dish.
  2. Whisk together the eggnog, eggs, sugar, nutmeg, and vanilla.
  3. Place the brioche cubes in the dish and scatter the raisins over them.
  4. Pour the custard over the bread and press down so it soaks in.
  5. Let it sit 10 minutes, then bake 40 to 45 minutes until set and golden.
  6. Cool slightly before serving warm.

Notes

Letting the bread soak before baking is what makes it custardy throughout.
