Easy Teriyaki Chicken Skewers

Ingredients
  

  • 1 1/2 pounds boneless skinless chicken thighs cubed
  • 1/2 cup teriyaki sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 2 cloves garlic minced
  • 1 bell pepper cut into chunks
  • 1 onion cut into chunks
  • Wooden skewers

Method
 

  1. Soak the wooden skewers in water for 20 to 30 minutes while the chicken marinates.
  2. Whisk the teriyaki sauce, soy sauce, honey and garlic together and marinate the cubed chicken for up to 2 hours.
  3. Thread the chicken, peppers and onion onto the skewers, using two skewers per kebab.
  4. Grill or broil 12 to 15 minutes, turning, until the chicken reaches 165 degrees F.
  5. Brush with fresh teriyaki sauce, never the used marinade, before serving.

Notes

Soaking the skewers prevents splintering. Two skewers per kebab keeps them from spinning when you flip. Do not marinate longer than two hours or the texture goes mushy and too salty. Never pour used marinade over cooked chicken - it held raw chicken and is a cross-contamination risk.
