Easy Pecan Snowball Cookies

Rolling in powder sugar, these tender shortbread-style cookies with lots of pecans.

Servings: 24 cookies

Ingredients
  

  • 1 cup butter softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla
  • 2 cups all-purpose flour
  • 1 cup finely chopped pecans
  • 1 cup powdered sugar for rolling

Method
 

  1. Cream the butter and powdered sugar, then beat in the vanilla.
  2. Mix in the flour and chopped pecans until a soft dough forms.
  3. Roll the dough into small balls and place on a lined sheet.
  4. Bake at 350F for 12-15 minutes until the bottoms are just golden.
  5. Roll the warm cookies in powdered sugar, then roll again once cooled for a snowy coat.

Notes

Double-rolling in sugar gives them that classic snowball look.
