Ingredients
  

  • 1 cup creamy peanut butter
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda

Method
 

  1. Preheat oven to 350°F and line a baking sheet with parchment paper.
  2. Stir together peanut butter, sugar, egg, vanilla, and baking soda until a cohesive dough forms.
  3. Roll dough into 1-inch balls and place 2 inches apart on the prepared baking sheet.
  4. Press each ball down with a fork twice to create a crosshatch pattern.
  5. Bake 10-12 minutes until edges are just set — centers will look underdone but firm up while cooling.
  6. Let cool on pan for 5 minutes before transferring.
