Instructions: 1 Preheat your oven to 400°F (200°C).
Line a baking sheet with parchment paper or aluminum foil for easy cleanup.
Place the chicken breasts on the baking sheet and brush them generously with BBQ sauce.
In a large bowl, combine the red bell pepper, yellow bell pepper, zucchini, red onion, and baby carrots.
Drizzle the olive oil over the veggies and sprinkle with garlic powder, smoked paprika, salt, and pepper. Toss to coat evenly.
Spread the seasoned vegetables around the chicken on the baking sheet.
Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the veggies are tender.
If you like extra char, you can broil for an additional 2-3 minutes.
Remove from the oven and let it cool for a few minutes.
Garnish with fresh parsley if desired.
Notes: For extra flavor, marinate the chicken in BBQ sauce for a few hours before cooking.
