Easy BBQ Chicken & Rice Skillet

Ingredients
  

  • 2 cups cooked rice
  • 2 cups shredded cooked chicken
  • 1 cup BBQ sauce
  • 1 cup frozen or canned corn drained
  • 1/2 cup shredded cheddar cheese
  • 1 tablespoon olive oil
  • Optional: chopped green onions extra BBQ sauce for drizzling

Method
 

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the shredded cooked chicken to the skillet and pour in the BBQ sauce. Stir to combine and cook for about 2-3 minutes until heated through.
  3. Add the cooked rice and corn to the skillet. Stir to mix everything together and cook for another 3-4 minutes until the mixture is well heated.
  4. Sprinkle the shredded cheddar cheese evenly over the top of the skillet.
  5. Cover the skillet with a lid and cook for an additional 2-3 minutes, or until the cheese is melted and bubbly.
  6. If desired, sprinkle with chopped green onions and drizzle with extra BBQ sauce before serving.
  7. Serve hot and enjoy your delicious and easy BBQ chicken & rice skillet!

Notes

You can use any type of cooked chicken you have on hand, like rotisserie chicken or leftovers. Feel free to add other veggies like bell peppers or peas for extra color and nutrition. This dish is perfect for meal prep and makes great leftovers.
