Double Chocolate Chunk Sweet Potato Brownies

Brownies are extra-decadent and made with loads of cocoa and big, melty, pieces of delicious chocolate!

Ingredients
  

  • 1 cup mashed sweet potato
  • 1/2 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1/2 cup brown sugar
  • 2 eggs
  • 1/3 cup melted butter
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup chocolate chunks divided

Method
 

  1. Preheat the oven to 350F and line an 8x8 pan with parchment.
  2. Whisk the sweet potato, brown sugar, eggs, butter, and vanilla together.
  3. Stir in the flour, cocoa, baking powder, and salt until just combined.
  4. Fold in three-quarters of the chocolate chunks and spread into the pan.
  5. Scatter the remaining chunks on top and bake 28 to 32 minutes; cool before slicing.

Notes

Use a mix of dark and milk chunks for the best pools of melted chocolate.
