Dill Pickle Pasta Salad

Tangy dill pickles, cheddar cheese, and corkscrew pasta in a creamy dill dressing.

Ingredients
  

  • 2 cups cooked corkscrew pasta rotini
  • 1 cup dill pickles diced
  • 1 cup shredded cheddar cheese
  • 1/2 cup red onion finely chopped
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/4 cup dill pickle juice
  • 1 tablespoon fresh dill chopped
  • Salt and pepper to taste

Method
 

  1. Cook the corkscrew pasta according to package instructions. Drain and let it cool.
  2. In a large bowl, combine the cooked pasta, diced dill pickles, shredded cheddar cheese, and finely chopped red onion.
  3. In a small bowl, whisk together the mayonnaise, sour cream, dill pickle juice, fresh dill, salt, and pepper to create the dressing.
  4. Pour the dressing over the pasta mixture.
  5. Toss everything together until all ingredients are evenly coated with the dressing.
  6. Chill in the fridge for at least 15 minutes to let the flavors meld together.
  7. Serve cold and enjoy this tangy and creamy pasta salad!

Notes

For extra crunch, add some diced celery. You can use Greek yogurt instead of sour cream for a lighter version. This salad is perfect for potlucks, BBQs, and meal prep!
