Dill Pickle Deviled Eggs

Ingredients
  

  • 12 large eggs hard-boiled and peeled
  • 3 tablespoons mayonnaise
  • 2 tablespoons dill pickles very finely chopped
  • 1 tablespoon pickle brine
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon dill weed
  • 1/4 teaspoon salt
  • thin pickle slices and fresh dill for garnish

Method
 

  1. Halve eggs and put yolks in a bowl.
  2. Mash yolks and mix in mayonnaise, chopped pickles, pickle brine, mustard, dill weed, and salt.
  3. Stir until smooth, taste and add more brine if you want more tang.
  4. Fill egg whites with the mixture.
  5. Garnish each with a thin pickle slice and a small dill sprig.
