Cucumber and Cream Cheese Sandwiches

Ingredients
  

  • 2 slices whole-grain bread
  • 2-3 tbsp cream cheese
  • 1/2 cucumber thinly sliced
  • A pinch of salt and pepper
  • Fresh dill or chives optional

Method
 

  1. Instructions: 1 Lay the slices of whole-grain bread on a clean surface.
  2. Spread a generous layer of cream cheese evenly over one side of each bread slice.
  3. Arrange the thin cucumber slices evenly over the cream cheese on one of the bread slices.
  4. Sprinkle a pinch of salt and pepper over the cucumber slices for added flavor.
  5. Add fresh dill or chives if desired for an extra herbaceous touch.
  6. Place the second slice of bread, cream cheese side down, on top of the cucumbers to form a sandwich.
  7. Cut the sandwich into halves or quarters, depending on your child’s preference.
  8. Pack the Cucumber and Cream Cheese Sandwich in your child’s lunchbox with a small side of fruit or crunchy veggies.
  9. Notes: For a fun twist, use flavored cream cheese like garlic and herb or garden vegetable. This sandwich can be made the night before and stored in the refrigerator for a quick grab-and-go lunch.
