Crispy Potato Skins

Ingredients
  

  • 4 large russet potatoes scrubbed clean
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1 1/2 cups shredded cheddar cheese
  • 8 slices bacon cooked and crumbled
  • 1/2 cup sour cream
  • 1/4 cup sliced green onions
  • Cooking spray

Method
 

  1. Pierce potatoes with a fork and microwave on high for 10-12 minutes until tender, turning halfway through, then let cool for 10 minutes.
  2. Cut each potato in half lengthwise and scoop out most of the flesh, leaving about 1/4-inch of potato attached to the skin.
  3. Brush the inside and outside of each potato skin with olive oil and sprinkle with salt, pepper, and garlic powder.
  4. Place potato skins in the air fryer basket skin-side down and cook at 380°F for 8-10 minutes until crispy.
  5. Flip the skins over and fill each with shredded cheddar cheese and crumbled bacon, then air fry for an additional 3-5 minutes until cheese is melted and bubbly.
  6. Remove from air fryer and top each potato skin with a dollop of sour cream and sprinkle with sliced green onions before serving.
