Method
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Cut the zucchinis into fry-shaped sticks, about 3-4 inches long and 1/2 inch thick.
- Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with a mixture of panko breadcrumbs, grated Parmesan cheese, garlic powder, paprika, salt, and pepper.
- Dip each zucchini stick into the flour, then the beaten eggs, and finally coat with the breadcrumb mixture. Make sure each stick is well coated.
- Place the coated zucchini sticks on the prepared baking sheet in a single layer.
- Bake in the preheated oven for 20-25 minutes, turning halfway through, until the zucchini fries are golden brown and crispy.
- Remove from the oven and let cool slightly before serving.
- Serve with your favorite dipping sauces like ranch, marinara, or a garlic aioli.
Notes
For extra crispiness, you can broil the zucchini fries for an additional 2-3 minutes at the end of the baking time. These fries are also delicious with a sprinkle of fresh herbs like parsley or basil. Perfect as a side dish, snack, or even an appetizer for parties!
