Crispy Oven-Baked Zucchini Fries

Ingredients
  

  • 2 medium zucchinis
  • 1/2 cup flour
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste

Method
 

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Cut the zucchinis into fry-shaped sticks, about 3-4 inches long and 1/2 inch thick.
  3. Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with a mixture of panko breadcrumbs, grated Parmesan cheese, garlic powder, paprika, salt, and pepper.
  4. Dip each zucchini stick into the flour, then the beaten eggs, and finally coat with the breadcrumb mixture. Make sure each stick is well coated.
  5. Place the coated zucchini sticks on the prepared baking sheet in a single layer.
  6. Bake in the preheated oven for 20-25 minutes, turning halfway through, until the zucchini fries are golden brown and crispy.
  7. Remove from the oven and let cool slightly before serving.
  8. Serve with your favorite dipping sauces like ranch, marinara, or a garlic aioli.

Notes

For extra crispiness, you can broil the zucchini fries for an additional 2-3 minutes at the end of the baking time. These fries are also delicious with a sprinkle of fresh herbs like parsley or basil. Perfect as a side dish, snack, or even an appetizer for parties!
