Crispy Maple Glazed Bacon

Regular bacon is great. Maple glazed bacon is something people talk about. It takes two extra minutes to brush on a little maple syrup before the last few minutes of baking and suddenly you've elevated the whole brunch spread.

Ingredients
  

  • 1 lb thick-cut bacon
  • 3 tbsp pure maple syrup
  • 1/4 tsp black pepper
  • Pinch of cayenne pepper

Method
 

  1. Preheat oven to 400°F. Line a large rimmed baking sheet with foil and place a wire rack on top.
  2. Lay bacon strips in a single layer on the rack.
  3. Bake for 15 minutes. While it bakes, mix maple syrup, black pepper, and cayenne.
  4. Brush the maple mixture over the bacon and return to the oven for 5 to 7 more minutes until the glaze is sticky and caramelized.
  5. Transfer to a plate lined with parchment (not paper towels — the glaze will stick). Cool 2 minutes before serving.
