Method
- Preheat the oven to 400 degrees F and line a baking sheet.
- Coat each tender in flour, then egg wash, then panko breadcrumbs.
- Bake 18 to 20 minutes, flipping once, until crisp and cooked through.
- Toss the tenders in the buffalo sauce immediately after baking.
- Warm the tortillas, then fill with lettuce, the buffalo tenders and a drizzle of ranch or blue cheese before rolling.
Notes
Baking with a panko coating saves calories and fat but will not get quite as crunchy as deep-fried. The flour and egg wash are what make the breadcrumbs stick. Toss the tenders in sauce right after baking - letting the sauce sit softens the coating. Warming the tortillas makes rolling easier and prevents tearing.
