Crispy Brussels Sprouts Chips

The outer leaves of Brussels sprouts that are roasted until they're shatteringly crisp and salty.

Ingredients
  

  • 1 lb brussels sprouts
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp garlic powder
  • 2 tbsp grated parmesan

Method
 

  1. Preheat the oven to 375F and line two baking sheets with parchment.
  2. Trim the sprout ends and peel the leaves apart into individual petals.
  3. Toss the leaves with olive oil, salt, and garlic powder.
  4. Spread in a single layer and roast 12 to 15 minutes, watching closely so they don't burn.
  5. Sprinkle with parmesan right out of the oven and serve warm.

Notes

Keep them in one layer — crowded leaves steam instead of crisp.
