Ingredients
  

  • 4 boneless skinless chicken breasts (5 oz each)
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 4 cloves garlic minced
  • 1/3 cup sun-dried tomatoes chopped
  • 1 cup low-sodium chicken broth
  • 1/2 cup half-and-half
  • 1/4 cup grated Parmesan cheese
  • 3 cups fresh baby spinach
  • Fresh basil for garnish optional

Method
 

  1. Season chicken breasts with Italian seasoning, salt, and pepper on both sides.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 6-7 minutes per side until golden brown and cooked through (internal temperature of 165°F). Remove chicken and set aside.
  3. In the same skillet, add minced garlic and sun-dried tomatoes. Sauté for 1 minute until fragrant.
  4. Pour in chicken broth and scrape up any browned bits from the bottom of the pan. Let simmer for 2-3 minutes.
  5. Reduce heat to medium-low and stir in half-and-half and Parmesan cheese. Simmer for 3-4 minutes until sauce begins to thicken, stirring frequently.
  6. Add spinach and cook for 2 minutes until wilted, stirring gently.
  7. Return chicken to the skillet and spoon sauce over the top. Simmer for 2-3 minutes to reheat. Garnish with fresh basil and serve with zucchini noodles or a small portion of whole wheat pasta.
