Creamy Turkey Pasta Family Pleaser

Ingredients
  

  • 1 pound penne or rigatoni pasta
  • 3 cups cooked turkey diced
  • 2 tablespoons butter
  • 3 cloves garlic minced
  • 2 cups heavy cream
  • 1 cup chicken broth
  • cups grated Parmesan cheese
  • 2 cups fresh spinach
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Method
 

  1. Cook pasta according to package directions until al dente. Drain and set aside, reserving 1 cup of pasta water.
  2. In a large skillet over medium heat, melt butter and sauté garlic for 1 minute until fragrant.
  3. Pour in heavy cream and chicken broth, stirring to combine. Bring to a gentle simmer.
  4. Add Parmesan cheese and Italian seasoning, whisking until the cheese melts and sauce becomes smooth.
  5. Stir in turkey and spinach, cooking until spinach wilts, about 2 minutes.
  6. Add cooked pasta to the sauce and toss to coat. If sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
  7. Season with salt and pepper to taste. Serve immediately with extra Parmesan on top.
