Ingredients
  

  • 2 tablespoons olive oil
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 2 28-ounce cans crushed tomatoes
  • 2 cups vegetable broth
  • 1 cup heavy cream
  • 1/2 cup fresh basil leaves chopped
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

  1. Heat olive oil in a large pot over medium heat. Add diced onion and cook for 5 minutes until softened and translucent.
  2. Add minced garlic and cook for 1 minute until fragrant, stirring constantly to prevent burning.
  3. Pour in crushed tomatoes and vegetable broth. Stir in sugar, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15 minutes.
  4. Using an immersion blender, blend the soup until smooth and creamy. Alternatively, carefully transfer to a blender in batches.
  5. Stir in heavy cream and fresh basil. Heat through for 2-3 minutes without boiling.
  6. Taste and adjust seasoning if needed. Serve hot with a garnish of fresh basil and a swirl of cream if desired.
