Creamy Garlic Parmesan One-Pot Pasta

The creamy garlic sauce clings to every strand of pasta, and the Parmesan adds that perfect savory finish. It's basically a hug in a bowl, and your family will be asking for seconds (maybe thirds!).

Ingredients
  

  • 1 pound penne or rigatoni pasta
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 6 cloves garlic minced
  • cups freshly grated Parmesan cheese
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Fresh parsley for garnish

Method
 

  1. Heat the olive oil and butter in a large pot or Dutch oven over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant (don't let it burn!).
  2. Add the uncooked pasta, chicken broth, salt, and pepper to the pot. Stir everything together and bring to a boil.
  3. Reduce heat to medium-low and simmer for 12-15 minutes, stirring frequently to prevent sticking, until the pasta is al dente and most of the liquid has been absorbed.
  4. Stir in the heavy cream and 1 cup of Parmesan cheese. Continue stirring until the cheese melts and creates a creamy sauce, about 2-3 minutes.
  5. Remove from heat and let stand for 2-3 minutes to thicken. Top with remaining Parmesan and fresh parsley before serving.
