Creamy Chicken Taco Soup

Ingredients
  

  • 1.5 pounds boneless skinless chicken breasts
  • 1 can 15 oz black beans, drained and rinsed
  • 1 can 15 oz corn, drained
  • 1 can 10 oz diced tomatoes with green chiles
  • 1 packet 1 oz taco seasoning
  • 4 cups chicken broth
  • 8 oz cream cheese cubed
  • 1 cup shredded cheddar cheese
  • Tortilla chips sour cream, and cilantro for serving

Method
 

  1. Place chicken breasts in the bottom of your slow cooker.
  2. Add black beans, corn, diced tomatoes with green chiles, taco seasoning, and chicken broth on top of the chicken.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours until chicken is cooked through and tender.
  4. Remove chicken and shred with two forks, then return to the slow cooker.
  5. Add cubed cream cheese and shredded cheddar cheese, stirring until completely melted and creamy, about 10 minutes.
  6. Serve hot with tortilla chips, sour cream, extra cheese, and fresh cilantro on top.
