Heat vegetable oil in a large skillet over medium-high heat and brown the pork chops for 3-4 minutes per side until golden.
Remove pork chops from the skillet and set aside on a plate.
In the same skillet, whisk together the cream of mushroom soup and water or broth until smooth.
Return the pork chops to the skillet, spooning sauce over the top, then reduce heat to low.
Cover and simmer for 25-30 minutes until pork chops are cooked through and tender, turning once halfway through.
Serve pork chops with the mushroom gravy spooned over the top.
