Crawfish Beignets

Enjoy Crawfish fritters that are fried to perfection with dipping sauce to make it a complete meal.

Ingredients
  

  • 1 lb crawfish tails chopped
  • 1.5 cups all-purpose flour
  • 2 tsp baking powder
  • 2 eggs
  • 0.75 cup milk
  • 3 green onions sliced
  • 2 tsp Cajun seasoning
  • 4 cups vegetable oil for frying

Method
 

  1. Heat the oil in a deep pot to 350 degrees.
  2. Whisk together the flour, baking powder, and Cajun seasoning in a bowl.
  3. In another bowl, beat the eggs with the milk, then stir into the dry ingredients until just combined.
  4. Fold in the chopped crawfish tails and green onions.
  5. Drop heaping spoonfuls of batter into the hot oil and fry for 3 to 4 minutes, turning until deep golden.
  6. Drain on paper towels and serve hot with remoulade or spicy aioli.

Notes

Don't crowd the pot or the oil temperature will drop and the beignets will turn greasy.
